Description

Delicious and healthy banana oatmeal bars made with old-fashioned rolled oats and ripe bananas.


Ingredients

  • 1 cup old-fashioned rolled oats
  • 0 cup quick oats
  • 1 tsp baking powder
  • 0 tsp ground cinnamon
  • 0 tsp salt
  • 1 cup mashed bananas (about 3 ripe bananas)
  • 2 tbsp peanut butter
  • 3 tbsp honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 0 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C). Spray an 8×8-inch pan with nonstick spray and line with parchment paper.
  2. In a large bowl, stir together rolled oats, quick oats, baking powder, cinnamon, and salt.
  3. In another bowl, mash bananas until smooth. Stir in peanut butter, honey, egg, and vanilla until combined.
  4. Add wet ingredients to dry ingredients. Mix until just combined, then fold in chocolate chips.
  5. Transfer batter into the prepared pan, pressing gently to even out. Bake for 18–20 minutes, until edges are golden and center is set.
  6. Let the bars rest for 10 minutes in the pan, then cool completely on a wire rack before slicing into 9 bars.
