- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup sour cream
- 1 cup cooked pasta (such as elbow macaroni)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat and Prep: Preheat your oven to 350°F (175°C).
- Cook the Pasta: Cook the pasta according to package instructions. Drain and set aside.
- Brown the Ground Beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Add the ground beef, cooking until well browned. Drain any excess fat.
- Add Tomatoes and Seasonings: Stir in the diced tomatoes, oregano, salt, and black pepper. Simmer for about 5 minutes to blend the flavors.
- Combine Ingredients: In a large mixing bowl, combine the cooked pasta, ground beef mixture, sour cream, and 1 cup of cheddar cheese. Mix well.
- Assemble the Casserole: Spread the mixture into a greased 9×13 inch baking dish. Top with remaining cheddar and mozzarella cheeses.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
Notes
- You can substitute ground beef with ground turkey or chicken for a leaner option.
- For added flavor, mix in some chopped bell peppers or mushrooms along with the onion and garlic.
- For a spicier version, add a pinch of cayenne pepper or crushed red pepper flakes while browning the beef.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
