- 2–3 tablespoons milk (for the glaze)
Instructions
- Prepare the Cinnamon Swirl: In a medium bowl, stir together the melted butter, brown sugar, and cinnamon until smooth. Transfer the mixture to a piping bag or a zip-top bag with the corner snipped off. Set it aside.
- Mix the Pancake Batter: In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, combine milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and gently mix until just combined. A few small lumps are perfectly fine. Overmixing can make pancakes dense instead of fluffy.
- Heat the Pan: Warm a nonstick skillet or griddle over medium heat. Lightly grease with butter. When a drop of water sizzles on the surface, it is ready.
- Add the Cinnamon Swirl: Pour about ¼ cup of batter onto the skillet for each pancake. Immediately pipe a spiral of the cinnamon mixture onto the surface, starting from the center and working outward.
- Cook and Flip: Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Carefully flip and cook for another 2–3 minutes.
- Make the Glaze: While the pancakes cook, beat together cream cheese and butter until smooth. Add powdered sugar, vanilla, and milk. Whisk until silky and pourable.
- Serve Warm: Stack the pancakes high and drizzle generously with cream cheese glaze.
