- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 6 cups chicken broth
- 2 cups water
- 3 cups egg noodles (or your choice of noodles)
- 1 teaspoon soy sauce
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the diced onion and sauté for 2-3 minutes until softened. Then, add minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the sliced carrots and celery. Cook for 5 minutes, allowing them to soften slightly.
- Add the cut chicken pieces to the pot, stirring until they are no longer pink, about 4-5 minutes.
- Pour in the chicken broth and water, scraping the bottom of the pot to release any stuck bits.
- Stir in the soy sauce, and season with salt and pepper to taste.
- Bring the mixture to a boil. Once boiling, reduce the heat and simmer for 20 minutes, allowing flavors to meld and chicken to cook thoroughly.
- Add the egg noodles to the pot, cooking according to package instructions until tender, usually around 5-7 minutes.
- Taste the soup and adjust seasoning as necessary, adding more salt, pepper, or soy sauce.
- Ladle the soup into bowls and garnish each with sliced green onions and chopped parsley.
Notes
- For extra flavor, you can add herbs like thyme or bay leaves during cooking.
- Leftovers can be stored in the refrigerator for up to 3 days.
