Chocolate Coconut Mousse

Description

A delicious chocolate coconut mousse with a crunchy cookie crust and silky chocolate ganache.


Ingredients

  • 1 cup crushed chocolate cookies
  • ¼ cup unsalted butter (melted)
  • 1 cup sweetened shredded coconut
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup coconut milk
  • 1 tablespoon gelatin powder
  • 3 tablespoons cold water
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Combine crushed cookies and melted butter; press into the bottom of a springform pan. Chill.
  2. Bloom gelatin in cold water; then heat coconut milk, coconut, and powdered sugar until warm. Stir in gelatin until dissolved.
  3. Whip heavy cream with vanilla until stiff peaks form; fold into the coconut mixture. Pour over crust and chill for at least 4 hours.
  4. Prepare ganache by melting chocolate chips in heavy cream over low heat; cool slightly before pouring over set mousse.
  5. Chill again for one hour, then slice and serve.

Notes

  • This dessert needs to be chilled for several hours, plan accordingly.
  • Make sure to use sweetened shredded coconut for the best flavor.
  • Using a springform pan makes it easier to remove the mousse for serving.
