Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin with cooking spray or liners.
- In a large bowl, whisk the eggs until fully mixed and slightly frothy, about 1-2 minutes.
- Fold in the cottage cheese, shredded cheddar, and grated parmesan until combined.
- Gently fold in the chopped spinach, diced red bell pepper, and chives, adding salt and pepper to taste.
- Using a ladle, divide the mixture evenly into the muffin cups, filling about three-quarters full.
- Bake in the preheated oven for 20-25 minutes until set and golden.
- Let the muffins cool in the pan for about 5 minutes before transferring to a wire rack.
- Enjoy warm or store in an airtight container.
