  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 can Cooking Spray
  • Muffin Liners

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with cooking spray or liners.
  2. In a large bowl, whisk the eggs until fully mixed and slightly frothy, about 1-2 minutes.
  3. Fold in the cottage cheese, shredded cheddar, and grated parmesan until combined.
  4. Gently fold in the chopped spinach, diced red bell pepper, and chives, adding salt and pepper to taste.
