This delicious cranberry orange loaf is perfect for any occasion.
Ingredients

- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- 3 large eggs
- Zest of 1 orange
- ½ cup fresh orange juice
- 1 cup fresh or frozen cranberries
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in orange zest.
- Gradually mix dry ingredients into the wet mixture, alternating with orange juice until just combined.
- Gently fold in cranberries and pour batter into the prepared loaf pan.
- Bake for 60–70 minutes or until a toothpick inserted in the center comes out clean. Let cool before serving.
Notes
- This loaf is best enjoyed fresh but can be wrapped and stored for a few days.
- You can use frozen cranberries for this recipe without thawing.
