Description

This delicious cranberry orange loaf is perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • Zest of 1 orange
  • ½ cup fresh orange juice
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in orange zest.
  4. Gradually mix dry ingredients into the wet mixture, alternating with orange juice until just combined.
  5. Gently fold in cranberries and pour batter into the prepared loaf pan.
  6. Bake for 60–70 minutes or until a toothpick inserted in the center comes out clean. Let cool before serving.

Notes

  • This loaf is best enjoyed fresh but can be wrapped and stored for a few days.
  • You can use frozen cranberries for this recipe without thawing.
