Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces twisted pasta (fusilli or cavatappi)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves fresh garlic, minced
  • 2 cups fresh spinach
  • 1 cup low-sodium chicken broth
  • to taste salt

  • 2 tablespoons olive oil

Instructions

  1. Begin by bringing a large pot of salted water to a boil. Add your twisted pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water for later.
  2. While the pasta cooks, season the chicken breasts with salt and pepper. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
  3. In the same skillet, add a bit more olive oil if needed. Reduce the heat to medium, and add minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer. Add grated Parmesan cheese and stir until melted and the sauce thickens slightly. If it’s too thick, add a bit of the reserved pasta water until you reach your desired consistency.
  5. Toss in the fresh spinach and cook for 2-3 minutes until wilted.
  6. Add the cooked pasta and sliced chicken to the skillet. Toss everything together to coat in the creamy sauce. Season with additional salt and pepper if needed.
  7. Plate the creamy garlic Parmesan chicken with cheesy twisted pasta and garnish with extra Parmesan cheese and fresh herbs if desired. Enjoy your meal!
