- 4 boneless, skinless chicken breasts
- 8 ounces twisted pasta (fusilli or cavatappi)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves fresh garlic, minced
- 2 cups fresh spinach
- 1 cup low-sodium chicken broth

- 2 tablespoons olive oil
Instructions
- Begin by bringing a large pot of salted water to a boil. Add your twisted pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water for later.
- While the pasta cooks, season the chicken breasts with salt and pepper. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
- In the same skillet, add a bit more olive oil if needed. Reduce the heat to medium, and add minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer. Add grated Parmesan cheese and stir until melted and the sauce thickens slightly. If it’s too thick, add a bit of the reserved pasta water until you reach your desired consistency.
- Toss in the fresh spinach and cook for 2-3 minutes until wilted.
- Add the cooked pasta and sliced chicken to the skillet. Toss everything together to coat in the creamy sauce. Season with additional salt and pepper if needed.
- Plate the creamy garlic Parmesan chicken with cheesy twisted pasta and garnish with extra Parmesan cheese and fresh herbs if desired. Enjoy your meal!
