- 3 chicken breast boneless (diced)
- 1/2 cup peanut butter
- 1/3 cup soy sauce
- 1 tbsp honey
- 1 lime (juiced)
- 1 cup chicken broth
- 1 red pepper (cut in strips)
- 1 bunch fresh cilantro (divided)
- 1/4 cup roasted peanuts (chopped for garnish)
Instructions
- Add the chicken, peanut butter, soy sauce, honey, lime juice and chicken broth to the crock pot.
- Cover and cook on low for 6 hours or on high for 3 hours.
- 30 minutes before serving, stir in the red peppers and cilantro.
- Serve over white rice topped with the chopped roasted peanuts.

- This dish is perfect for meal prep and can be served with rice or quinoa.
- Adjust the amount of honey to taste for desired sweetness.
