Description
A delicious and easy baked cod recipe with cherry tomatoes, garlic, and thyme.
Ingredients

- 4 pieces cod fillets (about 6 oz each)
- 2 cups cherry tomatoes
- 3 tbsp olive oil (extra virgin)
- 3 cloves garlic (smashed)
- 6 sprigs fresh thyme
- 1 lemon (juiced)
- 0 tsp salt (or to taste)
- 0 tsp black pepper (freshly ground)
- 0 tsp red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Lightly oil a baking dish.
- Place cod fillets in the baking dish, spacing evenly.
- Scatter cherry tomatoes and smashed garlic around the fish.
- Drizzle olive oil over the cod and tomatoes. Season with salt and black pepper.
- Add thyme sprigs on and around the fish.
- Bake for 13–15 minutes until tomatoes burst and cod flakes easily.
- Remove from oven and squeeze fresh lemon juice over the dish.
- Serve immediately, spooning burst tomatoes and juices over the cod.
Notes
- This recipe can be easily adjusted for different portions.
- Feel free to add more vegetables if desired.
