Description

A delicious creamy soup made with chicken and smoked beef.


Ingredients

  • 2 cups cooked, shredded chicken breast or thighs
  • 1/2 cup crispy smoked beef strips, plus extra for garnish
  • 4 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1/4 cup cream or milk for extra smoothness (optional)
  • 4 cups chicken broth (low sodium preferred)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons chopped green onions or chives, for garnish
  • Salt and black pepper to taste

Instructions

  1. In a large pot, combine the chicken broth, garlic powder, and onion powder. Bring to a boil.
  2. Add the cooked chicken, smoked beef strips, cream cheese, and cheddar cheese. Stir until the cheeses are melted and well combined.
  3. If desired, stir in the cream or milk for extra smoothness.
  4. Season with salt and black pepper to taste.
  5. Serve hot, garnished with chopped green onions or chives and extra smoked beef strips.

Notes

  • For a thicker soup, reduce the amount of chicken broth.
