Description

Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lbs)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 8 corn tortillas
  • 1 ripe avocado, diced
  • ½ cup full-fat sour cream (or Greek yogurt)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 cup shredded Monterey Jack cheese
  • ½ cup salsa (your choice)

Instructions

  1. Cook the Chicken: In a large pot, combine chicken breasts, chopped onion, minced garlic, and chicken broth. Bring to a boil over medium heat; then reduce to simmer for about 20 minutes until cooked through.
  2. Shred the Chicken: Remove the chicken from the pot and shred it using two forks while warm. Let cool slightly before mixing with lime juice and seasoning.
  3. Prepare Tortillas: Heat oil in a pan over medium-high heat. Fry each tortilla until golden brown and crispy.
  4. Assemble Tostadas: Spread shredded chicken over each crispy tortilla. Top with diced avocado, shredded cheese, cilantro, and a dollop of sour cream.
