- 3–4 boneless, skinless chicken breasts (about 1 lbs)
- 2 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 cups low-sodium chicken broth
- 8 corn tortillas
- 1 ripe avocado, diced
- ½ cup full-fat sour cream (or Greek yogurt)
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- 1 cup shredded Monterey Jack cheese
- ½ cup salsa (your choice)
Instructions
- Cook the Chicken: In a large pot, combine chicken breasts, chopped onion, minced garlic, and chicken broth. Bring to a boil over medium heat; then reduce to simmer for about 20 minutes until cooked through.
- Shred the Chicken: Remove the chicken from the pot and shred it using two forks while warm. Let cool slightly before mixing with lime juice and seasoning.
- Prepare Tortillas: Heat oil in a pan over medium-high heat. Fry each tortilla until golden brown and crispy.
- Assemble Tostadas: Spread shredded chicken over each crispy tortilla. Top with diced avocado, shredded cheese, cilantro, and a dollop of sour cream.
- Serve & Enjoy: Serve immediately with extra lime wedges and salsa on the side.
