Instructions
- Preheat your oven to 350°F (175°C).

- In another bowl, mix granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, and peppermint extract until smooth.
- Gradually fold in the dry mixture until just combined.
- Chill the dough for 30 minutes.
- Roll chilled dough into balls and coat in powdered sugar before placing on a parchment-lined baking sheet.
- Bake for 10-12 minutes.
