Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup plant-based milk (almond or oat)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 cup powdered sugar
  • 2 tbsp extra maple syrup

Instructions

  1. Preheat oven to 350°F (175°C) and grease a bundt pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine plant-based milk, applesauce, melted coconut oil, and maple syrup until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Pour batter into the prepared bundt pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. While baking, mix powdered sugar with extra maple syrup for the drizzle.
  7. Once cooled slightly, drizzle over the cake and serve.
