Description

This delicious recipe features bone-in, skin-on chicken thighs roasted to perfection with a zesty lemon and oregano marinade.


Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 lemons, zested and juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels.
  2. In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and black pepper.
  3. Add the chicken thighs to the bowl and toss to coat evenly with the marinade. Let marinate for 10 minutes if time allows.
  4. Arrange the chicken thighs, skin-side up, on a baking sheet or oven-safe dish.
  5. Roast in the preheated oven for 35 minutes, or until the skin is golden and crispy and the internal temperature reaches 165°F (74°C).
  6. Garnish with chopped fresh parsley and serve with lemon wedges if desired.
