- 1 cup white chocolate chips
- 1/4 cup butter
- 1 big pinch salt
- 2 tbsp lemon zest (from 2 lemons)
- 3 tbsp heavy whipping cream
- 1 tsp vanilla paste or extract (optional)
- 2–3 drops yellow food coloring (optional)
- 1/4 cup powdered sugar (for rolling)
- A couple drops lemon extract
Instructions
- In a small saucepan, melt the butter together with a pinch of salt and the lemon zest. Stir in the heavy cream, and heat the mixture until it is almost boiling, allowing the lemon flavor to infuse into the butter and cream.
- Place the white chocolate chips in a medium mixing bowl. Pour the hot butter and cream mixture through a fine-mesh sieve directly over the white chocolate chips to ensure no zest or solids get into the chocolate. Add the vanilla paste or extract and optional food coloring, then stir gently until the mixture becomes smooth and fully combined.
- Cover the bowl with plastic wrap or a lid and refrigerate the truffle mixture until firm enough to handle and shape into balls, approximately 30 minutes to 1 hour.
- Using a heaping teaspoon, scoop portions of the chilled mixture and carefully roll them into balls using your hands. Roll each ball in the powdered sugar to coat evenly.
- Place the coated truffles back into the refrigerator for at least 30 minutes to set before serving.
