Description

A delicious dessert combining fresh blueberries and cream cheese in a crust.


Ingredients

  • 2 pints fresh blueberries (approx. 4 cups)
  • ¼ cup granulated sugar
  • 2 tbsp brown sugar
  • 1 tbsp water
  • 1½ tbsp cornstarch mixed with 1½ tbsp water
  • 1 tsp lemon zest
  • ½ tsp lemon juice
  • ¾ cup butter, melted
  • 2 cups all-purpose flour
  • 1 cup chopped pecans, toasted or un-toasted
  • 2 cups heavy whipping cream
  • 2 cups plus 2 tbsp powdered sugar
  • 16 oz cream cheese, softened
  • 1 tsp vanilla extract

Instructions

  1. Combine 1 pint (approx. 2 cups) blueberries, granulated sugar, brown sugar, and one tablespoon water in a small or medium saucepan over medium heat. Stir constantly and gently crush some blueberries to release juices. Once sugar dissolves and the mixture begins to boil, stir in the cornstarch-water mixture. Continue stirring and allow to boil until slightly thickened, about one minute. Remove from heat and stir in remaining 1 pint of fresh blueberries, lemon zest, and lemon juice. Transfer to the fridge to cool completely before use.
  2. Preheat oven to 325°F (165°C). In a medium bowl, mix melted butter, all-purpose flour, and chopped pecans until combined. Spray a 9×13 inch baking dish with cooking spray, then evenly press the crust mixture into the bottom of the pan. Bake for 15 minutes at 325°F. Remove from oven and allow to cool, then place in the refrigerator to chill while preparing the filling.
  3. In two separate medium bowls, whip the heavy cream with vanilla extract until thick but not fully whipped, and separately whip the softened cream cheese with powdered sugar until smooth. Gradually combine the cream cheese mixture into the whipped cream bowl, mixing well for 1-2 minutes until fully blended and creamy.
  4. Spread the cream cheese and whipped cream filling evenly over the completely cooled crust. Gently spoon the chilled blueberry glaze over the filling, distributing evenly to cover the entire top surface of the dessert.
