Ingredients

- 2 cans chickpeas
- 2 tbsp olive oil
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 1 cup cherry tomatoes
- 2 cloves garlic
- 1 tsp paprika
- 1 tsp oregano
- 1/2 tsp cumin
- to taste Salt and pepper
- 2 tbsp parsley
Instructions
- Heat oil and sauté chickpeas until golden.
- Add onion and garlic.
- Add vegetables and spices.
- Cook until tender.
- Garnish and serve.
