- 1 lb Ground Beef
- 1 1/4 tsp Salt
- 1/4 tsp Ground Black Pepper
- 1/2 cup Chopped Onion
- 1/2 cup Chopped Bell Pepper
- 1 Egg, lightly beaten
- 1 (8 oz) can Diced Tomatoes without Juice
- 1/2 cup Quick-Cooking Oats
- 1/3 cup Ketchup
- 2 tbsp Brown Sugar
- 1 tbsp Mustard
Instructions
- Preheat the oven to 375°F and prepare a baking tray with foil and cooking spray.
- In a large bowl, mix together salt, pepper, onion, bell pepper, egg, diced tomatoes, and oats until well combined.
- Add ground beef and gently mix until evenly blended.
- Shape the mixture into a loaf on the baking sheet.
- Combine ketchup, brown sugar, and mustard in a bowl and spread on top of the meatloaf.
- Bake for 1 hour, checking for doneness (internal temp should be 160°F).
- Let rest for 10 minutes before slicing and serving.
