- 3 large egg yolks, slightly beaten
- 3 large egg whites
- ¼ cup granulated sugar
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Instructions
- Bloom the Gelatin: Start by sprinkling the unflavored gelatin over the cold milk in a small saucepan. Let it sit for 5 minutes to soften. This is key to achieving that classic chiffon texture—light yet set.
- Cook the Pumpkin Base: Add the brown sugar, salt, cinnamon, nutmeg, pumpkin, and egg yolks to the gelatin mixture. Stir well. Cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon. It should reach about 160°F. Do not boil. Once thickened, remove from heat and cool to room temperature, stirring occasionally.
- Whip the Egg Whites: In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add granulated sugar and continue to beat until stiff peaks form. This will give your chiffon its signature lightness.
- Fold Everything Together: Once the pumpkin mixture is cooled, gently fold in the beaten egg whites. Go slowly—use a rubber spatula and a light hand to keep the air in the mixture.
- Fill the Pie Shell: Pour the fluffy pumpkin chiffon mixture into the pre-baked pie shell. Smooth the top and refrigerate for at least 4 hours, or overnight, until set.
- Top with Whipped Cream: Before serving, whip the heavy cream with powdered sugar and vanilla until soft peaks form. Spread or pipe on top of the chilled pie. Optional: sprinkle a dash of cinnamon or nutmeg for a beautiful finish.
