Ingredients

- 1 cup fresh or frozen raspberries
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch mixed with 1 tablespoon water
- 6 oz (170g) white chocolate, finely chopped
- 1 1/2 cups heavy cream, divided
- 1 teaspoon vanilla extract
- 8 oz (225g) cream cheese, softened
- 1/2 cup powdered sugar
- Fresh raspberries, for layering and garnish
- Chocolate shavings or curls, for garnish
Instructions
- Make the Raspberry Sauce: In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until raspberries break down, about 5 minutes. Stir in the cornstarch mixture and cook for another 2 minutes, or until thickened. Remove from heat and let cool.
- Prepare the White Chocolate Mousse: Melt the white chocolate in a heatproof bowl set over a pot of simmering water (double boiler). Stir until smooth and let cool to room temperature.
- In a separate bowl, whip 1 cup of heavy cream with vanilla extract until stiff peaks form. In another bowl, beat cream cheese and powdered sugar until smooth. Fold in the melted white chocolate, then gently fold in the whipped cream until well combined.
- Assemble the Parfaits: In serving glasses, layer the white chocolate mousse, raspberry sauce, and fresh raspberries. Repeat the layers until the glasses are filled, ending with a layer of mousse on top.
- Garnish: Top each parfait with fresh raspberries and chocolate shavings or curls.
- Chill: Refrigerate for at least 2 hours before serving to allow the flavors to meld together.

- For a richer flavor, let the parfaits chill overnight.
