Description

A rich and flavorful shrimp soup made with butter, shallots, garlic, and cream.


Ingredients

  • 1 cup butter (for sautéing)
  • 1 cup shallots (finely chopped)
  • 2 cloves garlic (minced)
  • 16 oz shrimp (peeled and deveined)
  • 4 cups seafood stock (low-sodium preferred)
  • 1 cup heavy cream (adds richness)

Instructions

  1. Melt butter in a pot over medium heat, add finely chopped shallots and garlic. Sauté until fragrant, about 3 minutes.
  2. Add the shrimp and cook until they turn pink, about 2 to 3 minutes.
  3. Pour in the seafood stock and let it simmer for 10 minutes.
  4. Stir in the heavy cream and blend using an immersion blender until smooth.
