Description

A delicious and spicy ground beef stir-fry served over fluffy steamed rice.


Ingredients

Scale
  • 1 cup (200g) long-grain white rice
  • 2 cups (480ml) water
  • 1 tablespoon (15ml) vegetable oil
  • 1 pound (450g) ground beef
  • 3 cloves garlic, minced
  • 1 tablespoon (15g) ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup (150g) broccoli florets
  • 1 carrot, julienned
  • 2 tablespoons (30ml) soy sauce
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5g) chili flakes
  • 1 teaspoon (5g) sugar
  • 2 green onions, sliced

Instructions

  1. Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the water is absorbed and the rice is tender. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  2. While the rice cooks, heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Add the minced garlic and grated ginger to the skillet with the beef. Cook for 1 minute until fragrant.
  4. Add the sliced red bell pepper, broccoli florets, and julienned carrot to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  5. In a small bowl, whisk together the soy sauce, rice vinegar, chili flakes, and sugar. Pour this sauce over the beef and vegetable mixture in the skillet. Stir well to combine and cook for another 2 minutes until everything is heated through and coated in the sauce.
  6. Serve the spicy ground beef stir-fry over the steamed rice. Garnish with sliced green onions.
