Description

Ingredients

  • 1 teaspoon baking powder

  • 0 cups light brown sugar, packed
  • 1 large egg
  • 0 cups milk (almond or oat milk optional)
  • 0 cups vegetable oil
  • 1 teaspoon vanilla extract
  • 1 large apple, peeled and diced (like Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, mix the granulated sugar, brown sugar, and egg until combined. Add the milk, oil, and vanilla; stir until well blended.
  4. Add the wet mixture to the dry ingredients, and gently fold until just mixed. Be careful not to overmix!
  5. Fold in the diced apple until evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin cups, filling each one about ¾ full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring the muffins to a wire rack to cool completely.
