- 1 cup all-purpose flour
- 1 teaspoon baking powder

- 1 teaspoon ground cinnamon
- 0 cups granulated sugar
- 0 cups light brown sugar, packed
- 1 large egg
- 0 cups milk (almond or oat milk optional)
- 0 cups vegetable oil
- 1 teaspoon vanilla extract
- 1 large apple, peeled and diced (like Granny Smith or Honeycrisp)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
- In another bowl, mix the granulated sugar, brown sugar, and egg until combined. Add the milk, oil, and vanilla; stir until well blended.
- Add the wet mixture to the dry ingredients, and gently fold until just mixed. Be careful not to overmix!
- Fold in the diced apple until evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin cups, filling each one about ¾ full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 5 minutes before transferring the muffins to a wire rack to cool completely.
Notes
- For added flavor and moisture, consider using a sweeter apple variety.
