Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup fresh mango, diced
  • 1 cup fresh strawberries, sliced
  • Whipped cream for decorating
  • Mint leaves for garnish
  • 1 cup fresh strawberries, hulled and sliced (for sauce)
  • 1/4 cup granulated sugar (for sauce)
  • 1 tablespoon lemon juice (for sauce)

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix well. Add eggs one at a time, beating well after each addition. Mix in sour cream and heavy cream until just combined. Pour the filling over the cooled crust.
  3. Place the springform pan in a large baking pan. Fill the pan with hot water halfway up the sides of the springform pan. Bake for 60 minutes or until the center slightly jiggles. Turn off the oven, leave the door slightly open, and let the cheesecake cool in the oven for 1 hour. Refrigerate for at least 4 hours or overnight.
  4. In a saucepan, combine strawberries, sugar, and lemon juice over medium heat. Cook until strawberries break down and the sauce thickens, about 10 minutes. Allow to cool before using.
  5. Remove the cheesecake from the springform pan. Decorate the top with whipped cream along the edge. Add fresh mango and strawberry slices on top. Drizzle the strawberry sauce over the fruit. Garnish with mint leaves.

Notes

  • Ensure all ingredients are at room temperature for a smoother filling.
  • To prevent cracking, bake the cheesecake in a water bath and do not open the oven door while baking.
  • For a firmer topping, refrigerate the cheesecake after assembling the toppings for another hour before serving.
