This delicious blueberry French toast casserole combines rich cream cheese, fresh blueberries, and a custard-like filling for a perfect breakfast treat.

- 8 ounces Cream Cheese (softened)
- 1 cup Powdered Sugar (adjust to taste)
- 1/4 cup Milk (for mixing)
- 1 teaspoon Vanilla Extract
- 1 loaf French Bread (day-old)
- 2 cups Blueberries (fresh or frozen)
- 2 cups Milk (whole milk recommended)
- 5 large Eggs (for custard)
- 1 teaspoon Cinnamon (adjust based on preference)
- 1/4 teaspoon Nutmeg
- 1/2 cup Maple Syrup (for drizzling)
- 1 cup Whipped Cream (for topping)
Instructions
- In a medium bowl, combine cream cheese, powdered sugar, milk, and vanilla extract. Blend until smooth and creamy.
- Butter a 10×14-inch baking dish and layer half of the cubed French bread.
- Spread the cream cheese mixture over the bread cubes, then top with the remaining bread cubes.
- Whisk together milk, eggs, cinnamon, nutmeg, and vanilla extract until combined. Pour over the bread layers.
- Gently press the bread down to absorb the custard, then sprinkle remaining blueberries on top.
- Cover with aluminum foil and refrigerate for at least 8 hours or overnight.
- Remove from refrigerator, and preheat oven to 375°F (190°C). Bake covered for 45 minutes.
- Remove foil and bake for an additional 30 minutes or until lightly browned on top.
- Let cool slightly before slicing and serve warm with maple syrup or whipped cream.
Notes
- Using day-old bread helps to create a better texture.
- Feel free to adjust the sweetness by modifying the amount of powdered sugar.
- Can be made a day in advance for an easy morning breakfast.
