- 8 oz soft goat cheese
- 1 cup finely chopped pistachios
- 2 tbsp fresh herbs (chives or thyme)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix softened goat cheese with chopped herbs, salt, pepper, and olive oil until smooth.
- Roll the mixture into 1-inch balls using clean hands.
- Coat each ball in finely chopped pistachios until fully covered.
- Place truffles on parchment paper and refrigerate for at least 30 minutes to firm up.
- Serve chilled on a platter as an appetizer or snack.
