Description
This cheesy chicken and rice casserole is a comforting dish perfect for weeknight dinners.

- 2 cups cooked chicken
- 2 cups cooked white rice
- 2 cups broccoli florets
- 1 can (10 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 cups cornflakes
- 2 tablespoons butter
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook chicken and rice if not already prepared. Let them cool slightly.
- Blanch fresh broccoli for 2–3 minutes or thaw and drain frozen broccoli.
- In a large bowl, mix cream of chicken soup, sour cream, mayonnaise, milk, garlic powder, onion powder, salt, and pepper.
- Add the cooked chicken, rice, broccoli, and 1 cup of cheddar cheese. Mix thoroughly.
- Spread mixture evenly in the prepared baking dish. Top with remaining 1/2 cup cheese.
- Combine crushed cornflakes and melted butter, then sprinkle over the top.
- Cover with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden.
- Let rest for 5–10 minutes before serving.
Notes
- This dish can be prepared in advance and baked just before serving.
- Feel free to add other vegetables to the mix for more flavor.
