Instructions
- Prepare the Crust: Preheat the oven to 325°F (162°C). Crush the chocolate sandwich cookies in a food processor until fine. Mix the cookie crumbs with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until combined. Fold in 1 cup of mini chocolate candies.
- Bake the Cheesecake: Pour the cheesecake filling over the cooled crust. Bake for 55-60 minutes or until the center is set and the top is slightly golden. Let the cheesecake cool at room temperature for about 1 hour, then refrigerate for at least 4 hours or overnight.
- Prepare the Chocolate Ganache Topping: In a small saucepan, heat the heavy cream over medium heat until hot but not boiling. Pour the hot cream over the semi-sweet chocolate chips and let sit for 2-3 minutes. Stir until the mixture is smooth and glossy.
- Assemble the Cheesecake: Pour the chocolate ganache over the cooled cheesecake. Spread evenly with a spatula. Sprinkle extra mini chocolate candies on top.
