Description

A hearty pasta dish with Italian sausage and fresh vegetables.


Ingredients

  • 1 lb Italian sausage
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 2 medium carrots, peeled and diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 0 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • Crushed red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat and brown the sausage, breaking it apart with a spoon until fully cooked. Remove with a slotted spoon and set aside.
  2. In the same pot, sauté onion, carrots, and celery for 5–6 minutes until softened. Stir in garlic and cook for another minute.
  3. Return sausage to the pot and pour in chicken broth. Add Italian seasoning and bring to a simmer for 10–15 minutes.
  4. Stir in the ditalini pasta and cook for 8–10 minutes until pasta is al dente.
  5. Lower the heat and slowly stir in the heavy cream followed by the Parmesan cheese, stirring until melted and smooth.
  6. Season with salt and pepper. Garnish with parsley and crushed red pepper flakes if desired. Serve hot.

Notes

  • You can substitute the ditalini pasta with another small pasta if desired.
  • For extra flavor, consider adding some red wine to the pot after cooking the vegetables.
