Description
A hearty pasta dish with Italian sausage and fresh vegetables.

- 1 lb Italian sausage
- 1 tablespoon olive oil
- 1 small yellow onion, finely diced
- 2 medium carrots, peeled and diced
- 2 ribs celery, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup ditalini pasta
- 1 cup heavy cream
- 0 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste
- 1 tablespoon fresh parsley, chopped (optional)
- Crushed red pepper flakes (optional)
Instructions
- Heat olive oil in a large pot over medium-high heat and brown the sausage, breaking it apart with a spoon until fully cooked. Remove with a slotted spoon and set aside.
- In the same pot, sauté onion, carrots, and celery for 5–6 minutes until softened. Stir in garlic and cook for another minute.
- Return sausage to the pot and pour in chicken broth. Add Italian seasoning and bring to a simmer for 10–15 minutes.
- Stir in the ditalini pasta and cook for 8–10 minutes until pasta is al dente.
- Lower the heat and slowly stir in the heavy cream followed by the Parmesan cheese, stirring until melted and smooth.
- Season with salt and pepper. Garnish with parsley and crushed red pepper flakes if desired. Serve hot.
Notes
- You can substitute the ditalini pasta with another small pasta if desired.
- For extra flavor, consider adding some red wine to the pot after cooking the vegetables.
