Ingredients

- 2 ripe avocados
- 6 slices of bacon
- 4 slices of bread (preferably sourdough or ciabatta)
- 4 slices of mozzarella or your favorite cheese
- 1 medium tomato, diced
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons butter
- Optional: Fresh cilantro, chopped
Instructions
- Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to drain excess oil.
- Prepare the Avocado Spread: In a bowl, mash the avocados with a fork. Add the diced tomato, lime juice, olive oil, salt, and pepper. Mix well. Add chopped cilantro if desired for extra flavor.
- Assemble the Sandwich: Spread butter on one side of each bread slice. On the unbuttered side of one slice, layer the cheese, crispy bacon, and about two tablespoons of the avocado spread. Top with another slice of bread, buttered side out. Repeat for the second sandwich.
- Cook the Sandwich: Preheat a skillet or griddle over medium heat. Place the sandwich in the skillet, cooking until the bread is golden brown and crispy, about 3-4 minutes per side. Ensure the cheese is melted.
- Serve: Remove from heat and let sit for a minute. Cut the sandwiches in half and serve warm.
