- 1 pint vanilla ice cream, slightly softened
- 1 cup chocolate chips
- 2 tbsp butter

Instructions
- Prepare the Cookies:
- Bake or purchase cookies of uniform size. Let them cool completely if baked at home.
- For a cinnamon sugar touch, lightly dust cookies with a mixture of cinnamon and sugar.
- Soften the Ice Cream:
- Allow vanilla ice cream to soften at room temperature until it’s spreadable but not melted.
- Assemble the Sandwiches:
- Scoop approximately half a cup of softened ice cream onto the flat side of a cookie.
- Place another cookie on top, flat side down, pressing gently to spread the ice cream to the edges.
- Repeat for all cookies to make 6 sandwiches.
- Place sandwiches on a baking sheet and freeze for at least 1 hour or until firm.
- Prepare the Chocolate Drizzle:
- In a microwave-safe bowl, combine chocolate chips and butter.
- Microwave in 30-second increments, stirring in between, until smooth and melted.
- Garnish the Sandwich Stack:
- Stack ice cream sandwiches on a serving plate.
- Drizzle melted chocolate over the top, allowing it to drip attractively down the sides.
- Optionally, top with a dollop of whipped cream for extra indulgence.

- For a firmer ice cream texture, chill the assembled sandwiches overnight.
