A delicious chocolate coconut cake topped with pink tinted coconut frosting.

- 3/4 cup cocoa powder (unsweetened dark chocolate recommended)
- 1 tbsp baking powder (fresh)
- 1 tsp baking soda
- 1/2 tsp salt (sea or kosher)
- 1 cup butter (softened)
- 2 cups granulated sugar (or coconut sugar)
- 3 eggs (or flax eggs for vegan option)
- 1 tbsp vanilla extract (or almond extract)
- 1 cup buttermilk (or mix regular milk with vinegar)
- 1 cup hot water
- 1 cup heavy cream (or coconut cream for dairy-free)
- 2 cups powdered sugar
- 1 cup shredded coconut
- 1 tbsp pink food coloring (for coloring the coconut)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until well combined.
- In a larger bowl, cream together the softened butter and granulated sugar for 2-3 minutes until light and fluffy.
- Beat in the eggs one at a time along with the vanilla extract until well blended.
- Gradually mix the dry ingredients with the buttermilk, alternating each addition. Stir until combined.
- Stir in the hot water to the batter.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes until a toothpick inserted comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- For the frosting, whip the heavy cream and powdered sugar together until soft peaks form.
- Tint the shredded coconut with pink food coloring until evenly coated.
- Frost the cooled cake with the whipped mixture and sprinkle the pink coconut on top.
- Refrigerate the cake for at least one hour to allow the frosting to set.

- Ensure the baking powder and baking soda are fresh for optimal rising.
- If using flax eggs for a vegan option, combine 1 tbsp ground flaxseed with 2.5 tbsp water for each egg and let it sit for 5 minutes before using.
- For best results, let the butter soften at room temperature.
