Description

A delicious chocolate coconut cake topped with pink tinted coconut frosting.


Ingredients

  • 1 cup buttermilk (or mix regular milk with vinegar)
  • 1 cup hot water
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 2 cups powdered sugar
  • 1 cup shredded coconut
  • 1 tbsp pink food coloring (for coloring the coconut)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In a larger bowl, cream together the softened butter and granulated sugar for 2-3 minutes until light and fluffy.
  4. Beat in the eggs one at a time along with the vanilla extract until well blended.
  5. Gradually mix the dry ingredients with the buttermilk, alternating each addition. Stir until combined.
  6. Stir in the hot water to the batter.
  7. Pour the batter into the prepared baking pan and bake for 25-30 minutes until a toothpick inserted comes out clean.
  8. Allow the cake to cool completely in the pan on a wire rack.
  9. For the frosting, whip the heavy cream and powdered sugar together until soft peaks form.
  10. Tint the shredded coconut with pink food coloring until evenly coated.
  11. Frost the cooled cake with the whipped mixture and sprinkle the pink coconut on top.
  12. Refrigerate the cake for at least one hour to allow the frosting to set.
