Description
A delicious and hearty kielbasa and potato casserole made in a crockpot.
Ingredients
Scale
- 1 package kielbasa (14 oz, sliced into rounds)
- 1 lb baby potatoes (halved)
- 2 large green bell peppers (sliced)
- 1/2 large sweet onion (diced)
- 3 cloves garlic (minced)
- 1 can diced tomatoes (15 oz, undrained)
- 1 cup beef broth (or 1 cup water and 1 beef bouillon cube)
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Add the sliced kielbasa, baby potatoes, sliced green peppers, chopped onions, canned diced tomatoes, minced garlic, beef broth and seasonings to the crockpot. Stir, pushing the ingredients into the liquid as much as possible.
- Set to low for 4 hours or high for 2 hours.
- Mix the sausage and potato casserole, taste and season with additional salt and pepper if desired.
- Serve warm.
Notes
- This dish is perfect for meal prep and can be easily reheated.
- Adjust seasoning according to your preference.
