Instructions
- Pat the chicken breasts dry with paper towels and season liberally with blackening seasoning.
- Heat a cast-iron skillet over medium-high heat until smoking. Add olive oil and let it shimmer.
- Place the seasoned chicken in the pan and sear for about 5 minutes without moving until a dark crust forms.
- Add butter to each piece, flip them over, and cook for another 5-7 minutes until the internal temperature reaches 165°F.
- Drizzle with lemon juice, let rest for 5 minutes, then slice and serve.
