Description

A delicious and hearty crockpot chicken hominy dish that is easy to prepare and perfect for a family meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup green salsa (salsa verde)
  • 2 cans (15 oz each) canned hominy, rinsed
  • 4 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • Juice of 2 limes
  • Avocado and radishes (for garnish)

Instructions

  1. Season the chicken with salt and pepper and place it in the bottom of the crockpot.
  2. Add chopped onions and minced garlic on top of the chicken.
  3. Pour in the green salsa and chicken broth; stir gently to combine.
  4. Add rinsed hominy, cumin, oregano, and lime juice; give it another gentle stir.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken shreds easily.
  6. Serve topped with sliced avocado and radishes.
