Ingredients

- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup green salsa (salsa verde)
- 2 cans (15 oz each) canned hominy, rinsed
- 4 cups low-sodium chicken broth
- 1 medium onion, chopped
- 2 tsp ground cumin
- 2 tsp dried oregano
- Juice of 2 limes
- Avocado and radishes (for garnish)
Instructions
- Season the chicken with salt and pepper and place it in the bottom of the crockpot.
- Add chopped onions and minced garlic on top of the chicken.
- Pour in the green salsa and chicken broth; stir gently to combine.
- Add rinsed hominy, cumin, oregano, and lime juice; give it another gentle stir.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken shreds easily.
- Serve topped with sliced avocado and radishes.
Notes
- This dish can be served with tortilla chips for added crunch.
