Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak cubes dry with paper towels and season with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add steak bites to the skillet in a single layer and sear for 1–2 minutes per side until browned.
  4. Remove the steak from the skillet and set aside to rest briefly.
  5. Add butter to the skillet, scrape up browned bits, and let it melt over medium heat.
  6. Add minced garlic to the melted butter and cook for about 30 seconds until fragrant.
  7. Add zucchini to the skillet and cook for 3–5 minutes until tender-crisp.
  8. Return the steak bites to the skillet and toss everything together to coat with the garlic butter.
  9. Cook for another 1–2 minutes until the steak is heated through.
  10. Garnish with chopped parsley if desired, and serve immediately.
