Description

Delicious gluten-free Italian sausage roll filled with cheese and spices.


Ingredients

  • 2 tbsp olive oil
  • 1 lb Italian Sausage, casing removed
  • 2 cups low moisture mozzarella cheese, or provolone cheese grated
  • 1 ¾ cup lukewarm water
  • 4 tbsp whole psyllium husk
  • 2 ½ cup + 1 tbsp gluten free all purpose flour blend
  • 1 tbsp sugar
  • 2 ¼ tsp quick yeast
  • 2 tsp salt
  • 2 tsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 egg
  • 1 tbsp cream or whole milk
  • 1 tbsp grated parmesan
  • 1 tbsp Italian herb seasoning

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned all over, breaking it into bite-sized pieces.
  2. Remove the sausage with a slotted spoon and transfer to a plate to cool.
  3. In a small bowl, mix psyllium husk and lukewarm water until no lumps remain. Set aside to thicken into a gel.
  4. In a stand mixer bowl, whisk together gluten-free flour, sugar, yeast, and salt.
  5. Add psyllium gel, apple cider vinegar, and olive oil to the flour mixture. Mix on medium speed for about 5 minutes until combined and sticky.
  6. Flour your hands and a large piece of parchment paper. Knead the dough until soft and smooth.
  7. Roll the dough out into a large rectangle (about 12×20 inches).
  8. Spread the cooked sausage and cheese evenly over the dough.
  9. Fold the short edges of the dough in about ½-inch and roll it from the long side closest to you into a log.
  10. Transfer the dough to a large baking sheet, cover loosely, and let it rise in a warm place for about 1 hour.
  11. Preheat the oven to 400°F (200°C).
  12. In a small bowl, whisk together the egg, cream, parmesan, and Italian herb seasoning. Brush over the dough and cut slits on top.
  13. Bake for 15 minutes, rotate the baking sheet, and bake for another 20-25 minutes until cooked through.
  14. Transfer to a wire rack and let cool for 10 minutes before slicing and serving.
