A delicious and easy cheesy tostada casserole perfect for any meal!
Ingredients

- 1 cup Salsa (use homemade for extra freshness)
- 1 packet Taco Seasoning (can swap for individual spices like cumin and chili powder)
- 6 pieces Tostadas (corn tortillas can be used)
- 1 can Canned Beans (black or pinto) (remember to rinse before using)
- 4 pieces Scallions (chives can be used if scallions are not available)
- 2 cups Shredded Cheese (Cheddar or Monterey Jack) (any melty cheese works as a substitute)
- 6 large Eggs (create the signature baked topping)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 13×9-inch baking dish with cooking spray or olive oil.
- In a bowl, combine salsa with taco seasoning, stirring well. Set aside.
- Spread 1 cup of the salsa mixture in the baking dish. Layer in tostadas, half of the beans and scallions, and half of the cheese.
- Pour remaining salsa over the first layer, then add another set of tostadas, remaining beans, scallions, and cheese.
- Create six wells in salsa, crack an egg into each well, and sprinkle with salt and pepper.
- Cover with aluminum foil and bake for 35 to 45 minutes, checking egg whites at 35 minutes.
- Allow the casserole to rest for 5 minutes before serving.
Notes
- For added flavor, use homemade salsa.
- Feel free to mix and match your favorite types of cheese.
