Description

A delicious and easy cheesy tostada casserole perfect for any meal!


Ingredients

Scale
  • 1 cup Salsa (use homemade for extra freshness)
  • 1 packet Taco Seasoning (can swap for individual spices like cumin and chili powder)
  • 6 pieces Tostadas (corn tortillas can be used)
  • 1 can Canned Beans (black or pinto) (remember to rinse before using)
  • 4 pieces Scallions (chives can be used if scallions are not available)
  • 2 cups Shredded Cheese (Cheddar or Monterey Jack) (any melty cheese works as a substitute)
  • 6 large Eggs (create the signature baked topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 13×9-inch baking dish with cooking spray or olive oil.
  2. In a bowl, combine salsa with taco seasoning, stirring well. Set aside.
  3. Spread 1 cup of the salsa mixture in the baking dish. Layer in tostadas, half of the beans and scallions, and half of the cheese.
  4. Pour remaining salsa over the first layer, then add another set of tostadas, remaining beans, scallions, and cheese.
  5. Create six wells in salsa, crack an egg into each well, and sprinkle with salt and pepper.
  6. Cover with aluminum foil and bake for 35 to 45 minutes, checking egg whites at 35 minutes.
  7. Allow the casserole to rest for 5 minutes before serving.
