Description

A flavorful lemon herb rice dish that’s perfect as a side.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 2 shallots (finely diced)
  • 1½ cups white long grain rice (rinsed & strained well)
  • 6 cloves garlic (minced or pressed)
  • 2 cups chicken broth
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 lemon (zested & juiced)
  • 2 tablespoons chopped fresh parsley (flat-leaf parsley)
  • 2 tablespoons chopped fresh dill

Instructions

  1. In a saucepan, over medium heat, heat the olive oil. Add the shallots and cook until they soften.
  2. Stir in the rice and garlic, and cook for another 1 minute, while stirring constantly.
  3. Add in the chicken broth, salt, and pepper. Bring to a boil. Once boiling, cover the pan, and reduce the heat to low.
  4. Let simmer for 18-20 minutes or until the rice is soft and tender.
  5. Fluff the rice with a fork and stir in the lemon zest, lemon juice, parsley, and dill. Serve and enjoy!
