Description
A flavorful lemon herb rice dish that’s perfect as a side.
Ingredients

- 2 tablespoons olive oil
- 2 shallots (finely diced)
- 1½ cups white long grain rice (rinsed & strained well)
- 6 cloves garlic (minced or pressed)
- 2 cups chicken broth
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 lemon (zested & juiced)
- 2 tablespoons chopped fresh parsley (flat-leaf parsley)
- 2 tablespoons chopped fresh dill
Instructions
- In a saucepan, over medium heat, heat the olive oil. Add the shallots and cook until they soften.
- Stir in the rice and garlic, and cook for another 1 minute, while stirring constantly.
- Add in the chicken broth, salt, and pepper. Bring to a boil. Once boiling, cover the pan, and reduce the heat to low.
- Let simmer for 18-20 minutes or until the rice is soft and tender.
- Fluff the rice with a fork and stir in the lemon zest, lemon juice, parsley, and dill. Serve and enjoy!

- This rice pairs well with grilled meats or as a light vegetarian option.
