- 1 lb baby or Yukon Gold potatoes, halved or quartered

Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss potatoes with olive oil, salt, and pepper; spread on the baking sheet in a single layer.
- Roast for 25-30 minutes until golden brown, flipping halfway through.
- In a skillet over medium-high heat, melt butter until bubbling; add minced garlic and sauté until fragrant.
- Add steak bites in batches, searing until browned on all sides (about 4-5 minutes).
- Combine cooked steak bites with crispy potatoes; drizzle remaining garlic butter and garnish with fresh herbs.
