Description

A delicious and savory dish combining marinated chicken and noodles with a rich sauce.

Ingredients

Scale
  • 12 ounces noodles of choice (Choose rice, egg, or whole wheat.)
  • 1 pound chicken breast (Tender cuts for better flavor.)
  • 2 tablespoons low sodium tamari or soy sauce (Adds savory depth.)
  • 1 tablespoon honey (Balances spice with sweetness.)
  • 1 tablespoon chili paste (Adjust according to spice tolerance.)
  • 1 tablespoon toasted sesame oil (Adds rich flavor.)
  • ½ cup low sodium tamari or soy sauce (Enhances umami.)
  • 1 tablespoon peanut butter (Adds creaminess.)
  • 2 tablespoons rice vinegar (Introduces tanginess.)
  • 2 tablespoons chili paste (For added spiciness.)
  • 12 tablespoons brown sugar (Adjust sweetness to taste.)
  • ¼ teaspoon ground ginger (For aromatic flavor.)
  • 1 ½ tablespoons toasted sesame oil (Layering flavor.)
  • ½ teaspoon red pepper flakes (Adjust to liking.)
  • 3 tablespoons water (To thin the sauce.)
  • 1 tablespoon cornstarch (For thickening.)
  • ⅓ cup crushed peanuts (Adds crunch.)
  • ⅓ cup diced green onion (For freshness.)

Instructions

  1. Cut the chicken breast into small, roughly 1-inch pieces.
  2. Add the chicken to a bowl with tamari or soy sauce, honey, and chili paste. Marinate for 30 minutes to 2 hours.
  3. Bring a pot of salted water to boil and cook the noodles according to package instructions. Drain and set aside.
  4. In a separate bowl, whisk together all sauce ingredients except water and cornstarch.
  5. Add sesame oil to a skillet over medium/low heat, sauté the diced green onion for 2-3 minutes, then add garlic for 1 minute.
  6. Add the marinated chicken to the skillet and fry for 2-3 minutes on each side until cooked.
  7. Pour sauce into a pot over low heat. Whisk cornstarch with water and add to sauce, stirring until slightly thickened.
  8. Combine chicken, noodles, and sauce in the pot, mixing gently for 1-2 minutes.
  9. Serve hot, garnished with peanuts and green onion.

Notes

  • Adjust the amount of chili paste according to your spice tolerance.
  • Letting the chicken marinate longer intensifies the flavor.
  • You can use any type of noodles you prefer for this recipe.
