- 1 cup Sweet Corn Kernels

- 2 wedges Lime Wedges
Instructions
- In a mixing bowl, combine freshly squeezed lime juice, avocado oil, chili powder, ground cumin, garlic powder, salt, and black pepper. Toss the boneless chicken thighs to coat evenly and refrigerate for 15-30 minutes.
- Heat a skillet over medium-high heat, then add the marinated chicken thighs. Sear them for about 8-10 minutes on each side until they are nicely browned and reach an internal temperature of 165°F.
- In a separate bowl, mix together the sweet corn kernels, finely chopped red onion, sour cream, mayonnaise, Cotija cheese, chili powder, salt, pepper, and lime juice. Stir until well combined for a rich, flavorful topping.
- Heat the prepared rice in the microwave until it’s warm, which usually takes about 1-2 minutes. Fluff it with a fork and stir in fresh cilantro, if desired.
- Divide the warm rice into serving bowls, then layer on sliced chicken and the vibrant corn mixture. Finish each bowl with a sprinkle of additional Cotija cheese, fresh cilantro, and lime wedges. Serve warm and enjoy!
