Description
A delicious and healthy sautéed chicken dish with zucchini, garlic, and fresh parsley.

- 2 boneless skinless chicken breasts
- 2 medium zucchini, sliced into rounds
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add zucchini with a pinch of salt and pepper. Sauté for 3–4 minutes until tender. Remove and set aside.
- Reduce heat, melt butter in the skillet, and stir in garlic. Cook for about 1 minute until fragrant.
- Add lemon juice and stir to deglaze the pan, scraping up browned bits.
- Return chicken and zucchini to the skillet. Spoon sauce over the top and let everything simmer for 1–2 minutes.
- Garnish with fresh parsley and serve warm.
Notes
- For extra flavor, consider marinating the chicken for a few hours before cooking.
- This recipe can be served over rice or pasta for a complete meal.
