Description

A delicious kimchi omelette packed with vegetables for a tasty meal.


Ingredients

Scale
  • 2 Eggs
  • 1 tsp Mirin
  • 1 tsp Vegetable Oil
  • 2 tbsp Kimchi (chopped)
  • 2 tbsp Zucchini (chopped)
  • 2 tbsp Mushroom (sliced)
  • 2 tbsp Spinach (chopped)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Whisk egg, mirin, salt and pepper in a bowl.
  2. Heat vegetable oil in a pan.
  3. Once the oil is hot, add kimchi, zucchini and mushroom and sauté for 2-3 minutes.
  4. Add spinach and cook for a few seconds.
  5. Pour the egg mixture in the pan and cover the pan.
  6. Cook on medium heat until the eggs are set.
  7. Fold the omelette into half.
  8. Serve hot.

Notes

  • Feel free to add additional vegetables or proteins.
  • For extra flavor, consider adding cheese.
