Description
A delicious kimchi omelette packed with vegetables for a tasty meal.
Ingredients

- 2 Eggs
- 1 tsp Mirin
- 1 tsp Vegetable Oil
- 2 tbsp Kimchi (chopped)
- 2 tbsp Zucchini (chopped)
- 2 tbsp Mushroom (sliced)
- 2 tbsp Spinach (chopped)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Whisk egg, mirin, salt and pepper in a bowl.
- Heat vegetable oil in a pan.
- Once the oil is hot, add kimchi, zucchini and mushroom and sauté for 2-3 minutes.
- Add spinach and cook for a few seconds.
- Pour the egg mixture in the pan and cover the pan.
- Cook on medium heat until the eggs are set.
- Fold the omelette into half.
- Serve hot.
Notes
- Feel free to add additional vegetables or proteins.
- For extra flavor, consider adding cheese.
