- 1 lb boneless, skinless chicken breast
- 1 cup orzo pasta
- 1 cup bell peppers, chopped
- 1 cup broccoli florets
- 1 cup snap peas
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons sesame oil
- Salt to taste
- Pepper to taste
- 1 dash garlic powder
Instructions
- Begin by boiling a pot of salted water. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
- While the orzo is cooking, cut the chicken breast into bite-sized pieces. Season with salt, pepper, and a dash of garlic powder.
- In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Once hot, add the chicken and cook for about 5-7 minutes, until golden and cooked through. Remove the chicken from the pan and set aside.
- In the same pan, add another tablespoon of sesame oil. Toss in minced garlic and ginger, sautéing for about 30 seconds until fragrant. Add your fresh vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
- Return the cooked chicken to the pan along with the drained orzo. Pour in the soy sauce and fresh lemon juice, stirring well to combine everything. Cook for an additional 2-3 minutes to heat through.
- Just before serving, sprinkle lemon zest over the stir fry for an extra burst of flavor. Toss everything together.
