Description

Ingredients

  • 250 g macaroni pasta
  • 1 tbsp olive oil
  • 1 medium onion
  • 1 medium carrot
  • 1 celery stalk
  • 500 ml milk
  • 500 ml vegetable broth
  • 200 g cheddar cheese
  • 50 g cream cheese
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Dice onion, carrot, and celery then add to the pot and sauté until softened, about 5 minutes.
  3. Add macaroni, milk, vegetable broth, Dijon mustard, garlic powder, salt, and pepper, and bring to a gentle boil.
  4. Reduce heat to low, cover, and simmer, stirring frequently, until pasta is just al dente, about 10 minutes.
  5. Remove lid and stir in cheddar cheese and cream cheese until sauce is smooth and creamy.
  6. Let the mac and cheese rest off the heat for 2 minutes before serving.
