- 250 g macaroni pasta
- 1 tbsp olive oil
- 1 medium onion
- 1 medium carrot
- 1 celery stalk
- 500 ml milk
- 500 ml vegetable broth
- 200 g cheddar cheese
- 50 g cream cheese
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Dice onion, carrot, and celery then add to the pot and sauté until softened, about 5 minutes.
- Add macaroni, milk, vegetable broth, Dijon mustard, garlic powder, salt, and pepper, and bring to a gentle boil.
- Reduce heat to low, cover, and simmer, stirring frequently, until pasta is just al dente, about 10 minutes.
- Remove lid and stir in cheddar cheese and cream cheese until sauce is smooth and creamy.
- Let the mac and cheese rest off the heat for 2 minutes before serving.
