Description

Ingredients

  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 8 ounces dark chocolate, chopped
  • 1 cup heavy cream (for ganache)
  • 2 tablespoons unsalted butter
  • 20 sheets puff pastry or graham crackers
  • 1/2 cup toasted nuts, chopped (optional)

Instructions

  1. Prepare the Custard: In a saucepan, combine milk, heavy cream, and half of the sugar. Bring to a simmer over medium heat. In a separate bowl, whisk together remaining sugar, cornstarch, and egg yolks until smooth. Temper the egg mixture by slowly adding a third of the hot milk mixture, whisking constantly. Return the tempered egg mixture to the saucepan. Cook over medium heat, whisking continuously until thickened. Remove from heat, stir in vanilla extract. Let cool, covering with plastic wrap to prevent a skin from forming.
  2. Prepare the Ganache: Place chopped chocolate in a heatproof bowl. Heat cream in a saucepan until just simmering; pour over chocolate. Let sit for 2 minutes, then stir until smooth. Stir in butter until melted and glossy.
  3. Assemble the Slice: Lay a layer of puff pastry or graham crackers at the bottom of a lined baking dish. Spread half of the custard over the base layer. Add another layer of pastry/graham crackers, then the remaining custard. Top with a final layer of pastry or graham crackers.
  4. Top with Ganache: Pour the chocolate ganache over the top layer, spreading evenly. Optionally, sprinkle chopped toasted nuts over the ganache.
  5. Chill: Refrigerate for at least 4 hours or until set.
